摘 要：【目的】家庭食用山药多采用手工削皮，山药中含有的皂角素及植物碱会对皮肤产生刺激，造成过敏发痒，亟需探索更高效的削皮方法。【方法】文章在长矩形固定机架的基础上增加动力源、控制装置、传动机构、固定机构、削皮机构和间歇运动机构，阐述了三维模型的设计参数、整体结构、工作原理及工作过程，并进行了主要结构部件的设计，以实现山药削皮的全自动化。【结果】该削皮机能够顺利完成直径在20~50 mm范围内、长度在100~350 mm范围内的山药的切削工作，能够适应市场上多数尺寸的山药，整体性能良好，削皮洁净率均在93%以上。【结论】该装置结构简单、体积小、适合于家用，还可以对芦笋等较细的根茎类食物进行削皮，从根本上实现了山药的全自动削皮和家庭厨房机械化，更广泛地提高了山药的食用价值，传承并弘扬了河南省非物质文化遗产——怀山药的文化价值。

Innovative Design of Fully Automatic Household Small Yam Peeling Machine

Abstract: [Objective] Household consumption of yam is mostly done by manual peeling. The saponin and plant alkaloids contained in yam can irritate the skin, causing allergies and itching. It is urgent to explore more efficient peeling methods. [Method] The article adds a power source, control device, transmission mechanism, fixed mechanism, peeling mechanism, and intermittent motion mechanism to the long rectangular fixed frame. It elaborates on the design parameters, overall structure, working principle, and working process of the 3D model, and designs the main structural components to achieve full automation of yam peeling. [Result] The peeling machine can smoothly complete the cutting work of yams with diameters ranging from 20~50 mm and lengths ranging from 100~350 mm, and can adapt to most sizes of yams on the market. The overall performance is good, and the peeling cleanliness rate is above 93%. [Conclusion] The device has a simple structure, small size, and is suitable for household use. It can also peel thinner root and stem foods such as asparagus, fundamentally realizing the fully automatic peeling of yam and the mechanization of home kitchens, and improving the edible value of yam more widely. It inherits and promotes the cultural value of Huai yam, an intangible cultural heritage of Henan Province.
